I think you were a bit too critical regarding Henry and why he acted out. The situation with the Shears of Destiny mirrors that of the Excalibur situation. Only the roles have been reversed. Instead of Emma using Excalibur to save Hook against his will, Hook would have used the Shears of Destiny on Emma against her will. We all know what happened when Emma used Excalibur on Hook to save him. it turned him into another Dark One. And that entire situation almost destroyed the relationship between Emma and Hook. We can only guess what would have happened if Hook would have used the shears, but I can't imagine Emma being very forgiving if someone else died because of that. So perhaps Henry, with all his Author knowledge, feared the possible outcome and became angry. This also explains why Emma forgives Hook. She has been there and done that. You could say Emma would be a hypocrite if she hadn't forgiven Hook for keeping the Shears of Destiny.

I am always amazed at how they bring stories like this to life where one actor has to play against themselves in a scene. I think Lana does very well at it.

I actually have a pair of cotton shears very similar to the pair in this show and they work much like regular scissors they are just made of one piece of curved metal kind of like tweezers that you squeeze together and then release instead of 2 pieces of metal connected by a hinge.

It may be unintentional, but I had my own reasons for why Henry acted out. : For one, with throwing out the Pop-Tart, Hook is making decisions for him as a parent would and I personally have always seen Hook and Henry's bond as Henry having a cool adult friend that just happened to be dating his mom. (Just imagine if a friend of yours came over and threw away what you were planning to eat with no discussion) Also, Henry having a reaction to someone lying to him/his family might just be an issue with him, considering he lived the first 10 years of his life with Regina lying to him, then his reaction to when Emma lied to him about his dad, and now this with Hook I thought it was a nice chance for Henry to actually act like an actual kid and not just follow everyone around everywhere like he's been doing a lot the past few seasons.

When referencing the game controller I believe Hook was about to say that these were not designed for a one handed person. Not that he didn't know how to use it. :o)

I really like that reasoning Disney15ish and I think that makes a lot of sense. Furthermore, your explanation is far more in-depth than mine. Looks like I've been thinking a bit oversimplified.

Yep, that's my thought as well. However, you could argue that since Hook probably never used a controller before he wouldn't know either how to use one.
