The vampires were never going to go extinct. The reason they weren't turning people like crazy like you said, is pretty much explained by the alpha. He likes a quiet existence, he doesn't want vampires taking over the world or anything like that, he just wants them to be able to live. Once the vampires were hurt in a significant way he stepped in and would have been successful at correcting the problem if Sam hadn't been there.

They said in the episode this is just a temporary base with low defenses and they have only sent a few operatives over to america, also the men of letters usually aren't hunters except for some like ketch who have been trained and any hunters they might recruit

I HATE that they killed the alpha vamp in this episode. He was a great, very much underused villain and a way more likable character than any of the British men of wankers. I would have preferred that he systematically murdered them all.

As far as I know they have never mentioned what/who the 5 things in all of creation that the colt cannot kill...except for Lucifer. I assume that those 5 things are god, amara, lucifer, death and the empty ... though how lucifer made it into that group is probably just because the writers never thought of the concepts of amara and the empty at the time so thought lucifer should be included! But I would add a 6th to that now with Jack! This is of course just my opinion on what they are!
