I remember this being explained by Monroe in the beginning. When we see what Nick sees it is an emotional response but not all Wesen respond emotionally to situations when he is questioning them.

2021-07-09 11:32:57 As explained before Nick can only see that they’re wesen when they woge which is usually in an emotional situation & like Monroe said other than that they’re not seen unless they want to be seen. Just like they don’t know he’s a Grimm unless they woge.

The more powerful (or in control of themselves) a Wessen is the less likely they will reveal themselves so a Grimm can see them.
