Today it is really cold so we are eating a very traditional iconic Catalan meal to warm ourselves up
We are having Calçots.
They are a type of green onion native to Catalonia! Apparently the name is from the phrase - ‘calcar la terra’ which is the process of placing earth around the onion to whiten it.
Traditionally they were prepared by cooking over a fire of vine shoots. Today Camilla has cooked them in the oven though.
The sauce has onions, garlic, tomato , pepper and almonds, red wine vinegar and parsley.
Apparently ‘calçotades’ are big social gatherings here where people gather to eat calçots. I hope we get to go to one one day!
