Items "eating" Devil Fruit is one of the better examples where One Piece just asks you to suspend your belief. If you can get over the silliness of the idea it's actually pretty fascinating and serves to make Devil Fruit just that much more mysterious.

Personally, I always took it as an oversimplification of the process, to make it easier to understand. Since Miss Merry Christmas did mention it was a new type of technology developed in the Grand Line, it's very obvious they spmehow used some kind of science to extract the essence of the fruit and infuse it into an object. But, since the exact process is too difficult for a layman to understand, they just refer to it as the object "eating" the fruit, to keep it simple. I don't think it's really something that requires a lot of suspension of disbelief, it's just another reminder that the technology in One Piece is much more advanced than one would expect at first glance.

That's the beauty of it. It gets you EVERY. SINGLE. TIME. Robin screaming out, bawling her eyes out that she wants to live, that she wants to go out to sea with everyone is...it's simply amazing. Oda is the best, man.
