I do love the episodes in the earth cities, they just have a vibe about them and Bumi as well ofc. I could be wrong but I think what that girl did to Katara that messed with her waterbending was to do with Chi/Chakra and pressure points. It's a pretty common thing in Asian inspired shows and anime.

The official reason according to Micheal and Bryan is because it makes it easier to animate with fire vs fire but they tied that reason into her being a firebending legend in order to flow nicely with the story. Its amazing how much these two directors thought about the show tbh
