Ah, poor Rick... the gut microbiome is no joke - you can fall mentally (yep) and physically sick ... that too long term... if you mess with bacteria in the food. Including several inflammation induced cancers later on in life. Street food is a no no until you've been in the country for a while, even then it's best to take it slow. Also, one of the biggest reasons for gut issues is that Indian food has more fibre than western food in general. And guess what - some of the dormant bacteria love fibre and overbreed. Quite simple - don't increase fibre content so quickly. Pro tip: Take probiotics starting two weeks before your trip and keep it going for a month after you're back.

Quite a lot of it might hold true for people of Indian origin and born and brought up outside India. I moved to UK 20 years ago and also know many people who have migrated and visit India often and never have these issues. Also it is true that there are no stray dogs in UK. Are there stray dogs in US?
