I get what you're saying about the Hollows not being that interesting as antagonists. I felt the same way the first time I watched this series around 10 years ago. I don't know what it would feel like watching one episode a week. I had the benefit of being able to watch about 30 episodes over a few days. Up until around episode 20 I had started to lose interest and thought about dropping the series. Somewhere between episode 20 and 30 I got hooked and burned through the rest of the series over a couple of weeks. Although some of the filler was deadly. About a year ago I rewatched the series from the beginning and this time around the first 20 episodes didn't bother me as much. It was actually quite nostalgic getting to see these characters again and the early stages of their relationships. Especially Rukia and Ichigo who have a really fun almost sibling dynamic. There's something about Rukia that gets to me. She's very serious but still manages to have a bit of a fun quirky personality. Other similar characters to her in anime would usually be completely flat and monotone. The sort of characters that you like once you break the ice and get to know theme but Rukia was likeable almost from the start. Bleach came first but I would compare it to newer series such as Attack on Titan and Jujutsu Kaisen. Both series start with an enemy - Titans and Curses - that are scary and interesting in the beginning. However because they are essentially mindless or at least very primitive and simplistic in their goals and desires they don't make for very interesting antagonists in the long run. Attack on Titan introduced humans who could turn into Titans and the mystery of who they were and what they wanted as antagonists. Jujutsu Kaisen brought in rogue curse users and intelligent human-like curses. The Hollows in Bleach whilst essentially transformed humans have lost most of the complexity that makes for interesting antagonists. Bleach predates Attack on Titan and Jujutsu Kaisen and lacks some of the complexity that they introduced but they story does get more interesting as the series progresses.

Kubo took its time while writing the story so a real villain appears a little bit later in the story after the whole grouns set is done with who all the chars are. The wait is really woth for when we get into the 2 bigger plot part
