The only things i can say, without foreshadowing or spoiling are 1. Meliodas got the panties on purpose 2. The Sins are Holy Knights, which got setup so that it looks like they killed Zaratras. Since then the Sins are seen as Traitors and Enemies of the Kingdom. And only the other Sins called Meliodas Captain, because he is the Captain of the Seven Deadly Sins.

OK so the person who said that had to be a sin, so that means a sin was a traitor, and I’m not supposed to know whether the holy nights are the enemies or not? Are there supposed be two different stories? Am I supposed be confused about that?

They will explain later on in the Anime why Meliodas and Co. have "Nichnames" based on varius Sins, your other Questions etc. will be answered too. You can be confused, that is no Problem. This Kind of Storys always starts in the Dark, and they only give you small Peaces of the Big Puzzle, the more the Story Progress.

youre supposed to be in the dark about some of the stuff you asked don't sweat it. This show doesn't exactly have the best writing around but it knows how to setup a story, it's only ep 3

I’m just really not sure if I’m remembering things correctly. I swear Elizabeth said the holy knights were trying to overthrow the crown and take over. But Gilthunder is making it seem like the holy knights only want to protect the crown and the sins are the ones who were trying to overthrow the holy knights, and by relation, the crown. Am I correct?

Also, keep in mind that the Holy Knights aren't a hivemind or anything, but different persons; their goals may align, but maybe some of them weight/ see the reasons for the whole thing differently ;)
