The Human wears the corresponding key. The Lauda family's emblem is a heart stabbed by a dagger, and that also reflects on the locks and keys the family members use.

The collar and key symbolize the fact that a Vampire belongs to a Human. That they are not free. Dario hates his collar, but maybe not so much when Ermes comes closer to put it on him.
