I get you not wanting to read the manga but as we approach the end game you will most likely get spoiled, the upto date community could do with some mozy, especially the reverie where all the big one piece youtubers discuss theories and shit in 11 hour streams 😂 it sucks too though because manga reactions don't hit the same as anime reactions

Many of the one piece fans love the details that you(a person who is reading/watching one piece) catch in the series. So its more fun if you go back and forth if you miss something or want to clarify or just want to revisit. Its more fun that way, that way you can get deeper into one piece. And yes the anime having the voice action, music, animation and all that makes one piece watching better/fun. But reading the story will get you more involved in thinking up things…. After catching up of-course you can weekly watch new episode (dont think it wont be, it will definitely be fun) you can read new chapters weekly too and discuss the current arcs and theories. I hope you at-least try reading few chapters before you completely disregard it…
