Himmel said that Frieren would enjoy the sunrise is not because of the sunrise itself, but because she would enjoy watching it together with her friends. That’s why when she saw Fern smiled, she realised about that and smiled herself. Frieren also wouldn’t be able to wake up that early to watch the sunrise, so when Himmel said that she would enjoy the sunrise, it is a given that she would watch it with her friends, so there’s a double meaning there.

I think Fern is around 16/17 years old in this episode. So if the journey will take around 10 years, she will be in her late twenties at that time. As a mage, she will still have a long time after that to figure out what she wants to do and settle down. Besides, she is traveling with, and getting trained by, the mage from the hero's party that defeated the Demon King. That has to count for something.
