HEY ONIMART! So sorry about the long delay of no recipes! If you don't follow me on other socials, I actually moved to Japan and joined GeeXPlus! There is finally time to upload recipes again so expect to see more in the near future! Thank you again so much for your patience and support!



Ingredients:

Beef & Broth:

  • 1 lb beef brisket or shank
  • 1 L water
  • 1 lemongrass (white part)
  • 4 chunks galangal
  • 6 kaffir lime leaves
  • 6 shallots
  • 3 garlic cloves

Paste (makes 2 servings):

  • 20 cloves garlic
  • 2 tbsp shallots, chopped
  • 1 tbsp galangal
  • 1 tbsp lemongrass (white part), chopped
  • 2 tbsp fresh turmeric
  • 20 fresh chilis
  • 20 dried chilis
  • 2 tbsp kapi shrimp paste
  • 1 tbsp curry powder

Soup:

  • 250ml coconut milk
  • 1 serving of khao soi paste
  • Cooked beef
  • Beef broth
  • 1 ½ tbsp palm sugar
  • ½ tbsp fish sauce

Garnish:

  • Fried egg noodles
  • Cooked egg noodles for soup

Instructions:

  1. In a stock pot, combine the beef and broth ingredients. Boil on low heat for 4 hours or until the beef is tender. If using a pressure cooker, cook on high for 1.5 hours.
  2. Set the cooked beef aside and strain the broth for later use. Discard the rest of the aromatics.
  3. In a mortar and pestle (or food processor), combine all the ingredients for the paste. Crush or process until you have an evenly mushed and thick paste. Set aside half of the paste (1 serving) for the dish and refrigerate the rest for up to 1 week.
  4. Once the beef and broth are done and strained, heat another stock pot. Stir-fry 1 serving of khao soi paste with coconut milk on medium heat until the fats start to separate a little and it smells aromatic.
  5. Add the cooked beef and stir-fry for another minute.
  6. Add the beef broth and boil for a few minutes until well combined. If the soup is quite thick, you can add more broth/stock or water to adjust the consistency.
  7. Season the soup with palm sugar and fish sauce, adjusting to taste.
  8. To serve, boil egg noodles according to package instructions. Ladle the soup and beef over the noodles. Garnish with fried egg noodles, cilantro, a squeeze of lime, or any other toppings you like.
