The Snape Arc is what all is here for in the end. (RIP Allan Rickman) Yes, there's a lot of filler, but its hard to cook down into movie length. In the books it obviously makes sense, whereas the movies filler is altered to fit the timeline etc...

there is a reddit theory about harry being a psychiatric patient and hogwarts is a mental institution that follows the delusion of their patients. JK Rowling said that this was never the true meaning of the story and it's in no way intended. But rewatching the movies with this theory in mind, it actually becomes hilarious.
